The former world's best bartender, Ryan Chetiyawardana - the man behind Dandelyan - has launched Cub, which aims to be environmentally sustainable.
Tabletops are made from recycled yoghurt pots, plates from plastic bags and pendant lights from cork, while the menu uses food waste such as chicken bones.
The food in unpredictable, but the set menu is good value as most courses are matched with great drinks.
